3/8 is the major diameter of the bolt. 16 is the threads per inch. I suspect that you mean you use bigger NUTS as washers, not bigger bolts and that's OK too.
For instance, you could use a 1/2-13 nut as a thick washer for a 3/8-16 bolt.
