Sculpting foam?

Just wondering what to use to sculpt, cut, shape foam and carpet pad. I am recovering a dash and need to fill in deep cracks. I have a SEM's two part foam product I may use and closed cell foam for tray, or I may use carpet pad. I need to carve out the tray section. Then recover in 4 way stretch vinyl.

Use an electric kitchen knife. You can find them at garage sales cheap.
