Deciding the cars purpose is important. You would not do a Concours restoration on a car that was going to be driven to sonic or occaisionally to the track, on the street etc. It would be self defeating as the first scratch you got on that $10,000 paint work (just the paint no extras) would be painful to say the least.
My guess is you want a nice clean daily driver with some good performance and street manners.

When it comes to the motor, its obvious you arent worried about a concours resto as you wont have a numbers matching engine anyhow.
I wouldnt build the 350, a building a 400 or 455 costs the same amount. A 350 isnt a bad motor by any means.Just cant make the power with the 350 that a larger displacement will make. If the motor runs then just clean it up , paint it nd set it in. A running engine is nice, it makes moving the car around a lot easier.Not to mention more fun.
