Ten-Bolt Rebuild - Without Crush Sleeve?
Is there a way to rebuild the ten-bolt diff without using a crush sleeve? In other words - use the appropriate shim stack instead.

I don't see why not. All that's needed is a tube spacer the right length to result in proper pinion bearing pre-load. Just be prepared to do some assembly / dissassembly until you get it right. Just curious, why wouldn't you use a crush sleeve?

Definitely, several differential sources supply solid sleeves and shims to replace crush sleeves.
Crush sleeves are not reuseable. Solid sleeves are a popular addition for Ford 8 and 9" rear ends. Never build one without a solid sleeve. period. Currie has the Ford kit for about $ 10. Solid sleeves are a much better way to do it because severe power loading cannot squish the sleeve and cause pinion slop and eventual gear wear or breakage.
