i can think of a couple things that could be causing your problem. 1st is, whether it has a lockup 350 or a 700r4, try unplugging the connector on the left side of the trans and check for +12v. if it has power then, thats your problem as its energizing the converter clutch and thats what is stalling the engine. now this isnt very common, and usually oil is only available for lockup after the trans goes into 2nd gear.
2nd is maybe you used either the wrong bolts for the converter, or when pushing the converter up to the flexplate and it didnt go flush before you tightened up the bolts and has caused a warp issue to the converter and the clutch in the converter is being applied that way
and 3rd is, the thought of a bad ignition module or coil. i have seen where engines have run fine while in park or neutral and you put a load on it when put in gear and the engine stalls.
if by chance it is because of power going down to the trans then, id say you hooked something up wrong with either power or vacuum on your engine change. before the late 87 700r4's came out, they used a different way of locking up the converter and, vacuum and temp sensors on and from the engine were used to enable the torque converter clutch to engage.
in late 87- early 88, they changed it over to enable converter clutch operation from the v.s.s.
