PVC foamboard will work fine. I use 3MM thickness, which is about 1/8". You will need a framework of some kind to support it.
You cut it with regular woodworking tools or with a utility knife.
It comes in 4' by 8' sheets, so you probably won't need to glue it, but if you do, crazy glue works well. I have also had good luck gluing it together with foam to foam contact adhesive like K-Grip or K-Spray.
