One vote for a Tuck & Roll job! The colors really don't matter to me, but something easy for the camera to see the little details.
Once again, Dan, you've gone way, way beyond the call of duty to even propose this project. It really says a lot about the man inside when you offer to take time, tools, and supplies from your own business to demonstrate the proper way to finish a project such as this for us. Sure, you might be able to sell the seat once it's completed, but that isn't the reason for your taking the project on - and that screams class. I, for one, really appreciate it, and I really look forward to seeing how you do whatever you decide to do with the seat.
