what transmission to use???

what transmission would be best for me?
I have access to all 3 Chevy trans. 350 400 and 700R4. I will rebuild any of them.. I will need to buy a torque converter.
I will be putting this in a 1947 Plymouth with a stout 355, running around 500 hp. I am going to use this as a cruzer only. no dragging. I plan to take the car on the freeway. Any ideas??? will the bell housing on the 700 bolt up to a pre 87 block? is a 700 strong enough for the application??? Will a stock 700 out of a 3/4 ton truck work?

bellhousing will work, I'd run the 400 though with that kind of hp. the 700r4 will have to be built with some better hardparts and done right or it will break
