Why can't you use a Mercedes flywheel and pressure plate and a Chevy disc and mod or different throw out and pilot bearings?
Or, drill the Mercedes flywheel for a different pressure plate.

You might make an crank adaptor. Six counteersunk hole to bolt to the crank and six studs to accept the Chevy flywheel. This would mean you might have to make an adaptor to move the trans back or maybe not, as the clutch may still fit in the bell housing with a shorter or modified throw out bearing. A longer pilot bearing amy aslo be needed.
