You will not likely to need the tubes in way of the bolts as that connection is not all that highly stressed..if it were your seat belt anchors or your motor mounts then putting tubes in way of the bolts is a good idea..

you can either bend your tubing or get some larger tube and set your bandsaw to the vertical and saw a curve into the tube leaving a u-shape that fits the curve of the body..either way is fine..

just got the latest issue of SR mag and they spent the article on choppin a chevy totally on the chop and nuthin on the tubin' .
There is a site i visited where a guy added the 1" 1" tube and had plenty of pix but I can't find that for u now.
If u make up a door post using 1x1 and doubled it up with space between with supports top bottom and in area of hinges ,then u could drill thru & thru bolt with out the sleeve. If only using one 1x , or one larger tube u will need a sleeve to keep from crushing the tube on tightning the hinge bolts, as u saaid.
Make sure u keep the door opening braced while doing bthis so u won't have to move anything later to get door to fit. Check fit of door .plenty of times while welding it up.

That was a good place to see a backyard build. Too bad he burned out and hasn't done anything that I know of lately.
