You are going to find that there is a limited number of 4 way stretch vinyls. One of them is Morbern Allsport. CLICK HERE Even 4-way stretch vinyl will only stretch so far, so don't expect that this is going to be a breeze.
You need HHR (high heat resistant) contact adhesive for this job, like DAP Weldwood top and trim adhesive, or 3-M's top and trim adhesive. Because of the dash getting baked in the sun through the windshield, it would be way better to use a spray grade rather than an aerosol. I would let it dry for a long time before I put it back in the car. The glue gets stronger the longer it has been since it was applied.
