First you didn't say if the block has been decked. Then I see you have milled the heads. Measure how far the pistons are down in the hole or above the deck of the block. This measurement + the head gasket is your quench. Usually for a street motor you would want .040. This and your compression ratio is what effects what octane of gas you burn. This is how the head gasket thickness is decided. As for valve to piston clearance I would check with modeling clay. You are fine if have .080 clearance on the intake valve and .100 clearance on the exhaust valves. I like the 12-433-8 cam from Comp. Check it out on CamQuest's dyno.
