Rear suspension is a little soft, looking for ideas to firm it up some.

Some shocks with stiffer valving might do the job..Makes a case for adjustable shocks..

I was thinking adjustable spring overs or just those cheap springs that bolt on the shocks. If I put 2 ladies in the backseat the tires tend to rub. lol

Are you talking about the ride quality? Maybe the spring packs are shot. I had just two leafs with Cal-tracs on my S-10 and it rode great. Not sure what's "soft" with your setup, if it is ride, you could clamp the leafs forward of the axle like the old Mopar guys did back in the 60's and see if that helps. I'd dump those slapper bars for sure, or at least make sure they're pre-loaded against the springs at ride height...

Ride is find it just can't have any two adults in the back seat then the tires rub.
I was concerned about the slappers not being pre-loaded.

I would call and talk with the guys at Eaton about it. They have far more experience with spring packs than you or I do.
