How do you adjust a fan thermostat to the proper temp?

I have a 180* T-stat in my car and a adjustable thermostat with a radiator probe but it's missing the control knob with the temp settings. All I can do is turn the knob shaft clockwise to increase the temp that the fan turns on or counterclockwise to decrease the temp. Is there a trick for setting it so that it turns on when it should with a 180* t-stast?

Run it until the gauge hits about 195 then turn the knob til the fan starts.
