Master cylinder

Can you use a master cylinder from a 98 s10 pickup on a hot rod?

Sure, I'm using one on a '72 Vega converted to V8 right now. Uses the S-10 front disc/spindle conversion along with 10.5" rear drums.

The brakes neither know nor care where the M/C came from. The only things that matter are bore, piston stroke, whether or not the M/C has residual pressure valves in the outlet ports, and the needs of the wheel cylinders. Without knowing more about your system, it is impossible to tell if the S10 master is correct.
