Model A Top Inserts

I have no experience with this, so I've been researching. I have a 28 A sedan and it has this really fugly, which is worse than ugly, vinyl like top on it. I've got to pull it all off so I've been going back and forth on cloth or metal insert. Mine has good wood, padding and chicken wire already installed. How much wind noise or flapping do you experience with the insert? I've found the insert kits, Mike's has them, Bert's Model A parts and a few others, they all seem to use the Cobra long grain material. I was wondering if you installed insulation between the wood before you put in a head liner, wouldn't that cut down on noise? I like the looks of the inserts and I don't like the idea of all that welding on a metal one.
