This is a good one! My 7.4 runs at 180-195 here is the part i don't understand when i turn the engine OFF it boils over to the point coolant overflows the overflow bottle (bottle holds 1/2 gal)

That's because when you shut it down the coolant is no longer flowing and it's no longer being cooled and since the heat can't escape the block and radiator fast enough the result is it boils over. Since the coolant is boiling then I think it's time to change it as anti freeze is also anti boil so when it starts to boil is a sign the coolant is past due for changing.
You may want to add in a new radiator cap while your at it.
