I have a 67 Datsun Roadster and I would like to repaint, this is for my 16 year old son.
What is the best/easiest/most durable paint to use? Im a newbee.
The original paint is enamel it is red, I am sure that I will not be able to remove all the existing paint.

That is a question with no easy answer. The most durable finish is without a doubt going to be urethane base coat/clear coat, the next least durable is going to be urethane single stage, followed by the least durable lacquer. This all depends on what your after and what kind of shape the vehicle is in to begin with. If you are just after a quick repaint I would recommend Maaco or Earl Shibe.
