For those that have used these, which way to do they go on? Does the positive embossed side go towards the header or towards the head?

I can't answer your question but;

I have installed copper gaskets on bikes. In these circumstances you have to heat the gasket with a torch and drop it in cold water to make them pliable. Not sure if a car gasket is the same but you may want to look into it.

thats interesting I never herd about that before how much do you have to heat the copper?

You have to heat it up to the point where the copper starts to torn color and quench it this process is called annealing, kinda like you do with aluminum. This spreads the molecules out to make it more ply able, I used copper gaskets on one of my trucks and did not anneal them and have had no leak problems.
