I have always liked the look of a tweed covered dash, but only if done correctly. My '80 Malibu could use a bit of dressing up in the interior so I was thinking of covering some of the dash panels in tweed. Is this generally done with contact cement for going over the vinyl or is there stitching involved? And also if the panel to be covered ends half way down the dash (with an indented/solid seam) how do I make a nice finishing edge? Any ideas?

If Im thinking right, those dashes are kind of boxy. Which means there is going to be some stitching involved. If you arent good at making patterns and sewing, I wouldnt recommend trying it yourself.
