I have a 82 DeLorean with a chevy 350 in it, I just picked up a late model 5.3 fuel injected, would this match to the existing 350 adaptor?

Yes, the bellhousing pattern is the same on all Chevrolet V8s, big and small, from 1955 to present. Even the 230-250 inline 6s and the 4.3 V6 share this pattern.
