I have been working on a project for several years. I am to the point where I would like to to just prime my body put everything together drive it and finish the body work down the road. If I prime it with epoxy will I be able to put filler on in say a year or more without issues or will I have to strip it all off

You will not need to strip it but you will need to sand it and re-apply more epoxy. the Epoxy has a window of 7 days for application of the next layer. After that, sanding and re-application is needed for best adhesion.
