I can see that these are 13 yo posts but still. I have bought a first gen rx7 and plan to slap a 305 in it. I have a tranny for it but i want a stick shift. Im drifting this thing, Im not pushing super high hp cause its a pretty light car but i want over 320. Does anyone know what tranny I can get for my needs, at a decent price? Im buying a completely new stronger rear setup (axles, Diff, Driveshaft) so if your worried Im gonna blow my **** up, I wont.

Tremec T-5 would easily handle that power, next up would be the TKO-500 then TKO-600 or TKX.
These are all 5-speed overdrives.

About the cheapest way to go on a conversion like this is to use a bellhousing or an adapter kit that allows the use of the Ford World Class T-5 behind a SBC engine. You can get those T-5's new for $2000, and due to the 5.0 Mustang craze and it's popularity as a racing platform there is a plentiful used market for them that is a lot bigger than the GM version of the T-5.
Kill two birds with one stone, buy a explosion proof containment bellhousing made to adapt the SBC block to a Ford Manual trans bolt pattern and input shaft length. Drifting is going to be hard on the clutch and flywheel, and I assume you'd like to keep your feet and legs intact
