Part oy my winter project may be converting from 700R4 to 4-speed, and on a '31 Model A hot rod, should I be looking at the under-dash mount pedal/cylinder assemblies, or under the floor mount to the frame styles?

I like hanging pedals, but it's up to the individual's choice. Not sure if there's an advantage one way or the other, except depending on how they're mounted, floor mount may be easier to service (add fluid, etc.). If firewall mounted, then fill would be easy, but not too many guys like master cylinders hanging on the firewall. If mounted under the dash, that's where service gets tricky.

A's have a narrow firewall so there may be interference with the master cylinder and the left cylinder head with a v-8 installation..If you have an old master just hold it in various positions until you see where it fits and works fime taking into consideration servicing and operation..

Personally, I would prefer to have the pedals mounted beneath the floor. You can always add in a remote fill for the reservoir(s) if necessary. Just something to consider.

It depends. If you have outside the frame headers / exhaust then you'll have more space under the floorboards.

But if your exhaust is under the car, epecially if your running headers, and you are using a mechanical z-bar clutch set-up the firewall mount swing pedals are a better option.

And lastly, kudos to you for switching from an automatic to a manual.... :thumbup:

With reverse mounted hanging pedals, you could remote-mount the reservoirs under the factory cowl vent and use the vent to service the fluid...
