is the term gun adjustment mean the ratio of the paint and thinner sprayed through it? im guessing air pressure is too.

No thats not correct, it could mean simply moving the position of
the fan or tightening the packing screw etc, etc.

The sentence should be in context to something !

Example:

Adjust the gun to achieve fine atomization of the sprayable material .. etc etc.
