Hello I have a 160 degree thermostat in my 38 olds with a lq4 and operating temps are 180 to 190.
will it run hotter with a 180 deg thermostat?
Second question
Would the 160 deg thermostat be part of the higher temps in my other post?

LS motors source the temperature from the head which is logically hotter that the thermostat temps. It's possible that the stat is opening at 160, but the temps in the head have to reach 180 before that happens. If so, your temps at the sensor will likely increase proportionally.

I would not want the engine to operate below 180 simply because the engine oil tends to build up more contaminants at low temps.
Piston ring wear chart curve starts to head straight up when you go below an operating temp of 180°, both due to contaminants not being able to boil off and oil not getting up to temp to work as designed.

160° thermo is just too cold.

If the engine won't run within 10° of thermo temp, then either water capacity, radiator size, or airflow through it are not sufficient.
