Fel Pro has a steel shim head gasket that is just that. They also have a copper head shim that is designed to be used with a head gasket to make up material shaved off of heads and blocks.
That is the type of head gasket that Chrysler put on the '51 - '53 331 hemi. Replacements are unavailable (thankfully!) so people adapt the more conventional copper/asbestos sandwich type from the later model 345 hemi.
Shim gaskets are not as forgiving of uneven block or head surfaces, so make sure yours are flat before you use one. They work fine, in fact GM used them for years, but theirs are a little thicker (0.026").
