Without tearing the engine down, you will not know the actual condition. First question is why was this engine removed and sitting for 25 years?. is there rust in the cylinders?. I would tear it down slowly, marking main caps and rods. Then to the machine shop to check for cracks and inspection. If the block is good, a .030 overbore, new freeze plugs and cam bearings and go from there. The other replies are correct, if you don't know what you are doing, get a book, a good one is "Rebuilding the Small block Chevy" by Mr. David Vizard. This gentleman has forgot more about the SBC than most of us will ever learn. Since your engine is a 1968 model year, it has the larger journal crank. If the crank is bad, it can easily be made into a 350. Biggest issue is RUST. I have had blocks that had rust and wouldn't clean at .060 overbore. Good luck on your project.
