80corvette1972,
I don't know if you realize it, but those pistons combined with a 64cc chamber w/.040" gasket will give you over 11.5:1 compression ratio. Won't run on pump gas unless you have a very radical cam. IMO you need some flat top pistons w/12cc dish to get about 9.6:1 CR(if your using iron heads). Maybe a piston w/7cc valve reliefs if your using aluminum heads(10.2:1 CR).FWIW

80 Corvette,for your info;
you can buy an assembled 427 short block with all brand new parts including an shp block and balancing for under $4,000, from a very reputable crate supplier.
If you can replace the shp block with a GM 400 block for under $500. that by itself knocks off 12oo from the 4k and if you assemble the engine too thats a couple hundred, so for $2600 ish you get 70 or more cubes.

The 350 of course can be done dirt cheap if you use cheap block and used crank,used rods(not recommended)
shop around,deals are sometimes there when you need them.when you get the machine work done,especially a stroker,try to find a cnc equipped shop

80corvette1972,
Might consider a Speed Pro H631CP60(flat top w/5cc valve reliefs). If your pistons are at zero deck height at TDC w/.040" gasket your CR should be around 10.4:1. Could work with a big cam. You might want to look for a piston with 7cc valve reliefs instead. I couldn't find any Speed Pro brand with 7cc reliefs.
If your chambers get enough polishing to get them closer to 66cc should be ok?
You need to get a CR calculator program like this:

PS: You might want to read the article that accompanies the calculator as well: http://cochise.uia.net/pkelley2/DynamicCR.html
